Ingredients
- 1.5oz Plantain infused Ten To One Dark Rum
0.5 oz Ritual Sister Smoked Pineapple
0.25 oz Mr. Black Cold Brew
0.25 oz Caribbean Pina Liqueur
1 tsp Demerara syrup
2 dash Bittermens Xocolatl Mole Bitters
Garnish
Mint crown and grated nutmeg

Julep Tin
Instructions
Add ingredients to julep tin with a decent amount of pebbled ice then swizzle and top with more pebbled ice. Garnish with mint and nutmeg.
Plantain infused TTO
1. Fill water basin with water and place immersion circulator inside
2. Set circulator to 135F
3. Roast 450 g of plantains in oven at 350 degrees F for 20 minutes, until brown.
4. Remove from oven and let cool down.
5. Measure 1 750ml bottle of Ten to One into a ziplock bag & add plantains then seal
6. When circulator has reached 135F, place sealed infusion inside the water
7. Remove infusion after 120 minutes
8. Transfer infusion to an ice bath until it reaches room temperature
9. Strain through chinois and refrigerate.
