Put all ingredients into a shaker tin and lightly muddle the mint. Fill with ice and shake vigorously. Fine strain into a coupe glass.
*PINEAPPLE SIMPLE SYRUP
Bring 0.5 cups sugar, 0.5 cups water and 2 cups of fresh chopped pineapple to a boil. Remove from heat and cool to room temperature. Strain and gently press pineapple to release the juice. Store in an airtight container. Refrigerate.
